Pork

Shoulder

A versatile cut with moderate fat content. Suitable for slow cooking, roasting, braising, minced meat, and pulled pork. Offers rich flavor and good tenderness.

Neck

Well‑marbled, juicy, and flavorful. Ideal for grilling, roasting, steaks, sausages, and pulled pork. Known for excellent tenderness due to intramuscular fat.

Loin

A lean and tender section located along the back. Commonly used for chops, roasts, steaks, and schnitzels. Includes:

  • Tenderloin – the most tender cut of pork

  • Loin Chops – bone‑in or boneless cuts from the loin

Belly

A fatty, richly flavored cut. Used for bacon, roasting, braising, and slow cooking. Known for its soft texture and high fat content

Ham / Leg

A large, lean cut from the hind leg. Used for cured ham, smoked ham, roasts, and deli meats. Firm texture and mild flavor

Hock/Pork Knuckle

Cut from the lower part of the leg. Contains connective tissue and collagen, making it ideal for braising, boiling, and roasting. Produces a rich, gelatinous broth

Ribs

 

  • Baby Back Ribs – smaller, tender ribs from the upper loin

  • Spare Ribs – larger, meatier ribs from the belly area

  • St. Louis Cut – trimmed spare ribs with a rectangular shape


 

Head

Includes cheeks, jowl, tongue, and skin. Used for pâtés, terrines, head cheese, and slow‑cooked dishes. Pork cheeks are especially valued for tenderness

Trotters / Feet

Rich in collagen, used for soups, broths, traditional dishes, and gelatin extraction.
